POTATO SALAD

2 Lbs.		Yellow Potatoes
1/4 tsp		Salt
1-1/4 Cup	Mayonnaise
1/2 Tb.		Spicy Mustard
1/2 tsp.	Salt
1/4 tsp.	Pepper
2 Tb.		Sweet Deli Relish
6		Hard Boiled Eggs (Cooled)


     Peel the potatoes and cut into 1/2 inch cubes.  In a medium sauce pan bring 2 cups 
water to a boil.  Add 1/4 tsp. Salt and the Potatoes.  Boil until the potatoes are 
tender.  Strain the potatoes and emmerse them in cold water to stop the potatoes from 
cooking further.  Cool the Potatoes.

     Meanwhile prepare the dressing in a large bowl.  Combine the Mayonnaise, Mustard, 
1/4 tsp. Salt and the Pepper.  Stir in the Relish.  Chop the Eggs into pieces.  Add the 
Potatoes and the Eggs.  Toss to coat.  Chill for at least 6 hours.


     Makes 12 servings.
